ChefHiroki Takamura - A successor of Edo cuisine who adheres to "iki"
Born in Akita Prefecture in 1971. After graduating from high school, he enrolled in Akahori Nutrition College, which was located in Mejiro at the time. While attending school, he spent his days training at Taikohachi in Mejiro. In 1999, he went independent in his hometown of Akita and opened Japanese Cuisine Takamura. In 2016, he became the first person from Akita Prefecture to be selected as a "Cooking Master" by the Ministry of Agriculture, Forestry and Fisheries. Takamura continues to serve Edo cuisine unique to him, where timelessness and evolution coexist. Keep an eye on this restaurant that continues to evolve in the northern lands.

There is an aisle between the kitchen and the customer counter, allowing the chef to move freely between them. Sometimes, a portable water stove is used to serve freshly cooked food right in front of the customers, a clever touch. This is the same method as used at the chef's former restaurant, Taikohachi. The spirit he inherited from his master is evident throughout the restaurant, and he never forgets to entertain his customers. Of course, the food is great, but the clear Akita air and the layout of the restaurant itself are also elements that enhance the dishes at this restaurant.

At Japanese Cuisine Takamura, they rarely use ingredients directly from the farm. The owner goes to the market every morning to buy his ingredients directly. He buys ingredients from Stores who are professional connoisseurs, and makes what he wants to make himself.
