ChefTakayoshi Yamaguchi - A solitary craftsman who continues to strive for greater heights
Born in 1972 in Yamanaka Onsen, Ishikawa Prefecture, he was born into a family of lacquerware craftsmen. After nine years of training at the long-established Ginza restaurant "Hokake" and working at various sushi restaurants in Tokyo, he opened "Sushidokoro Mekumi" in Nonoichi City, Ishikawa Prefecture. Although the location is not exactly good, sushi connoisseurs from all over the country visit the restaurant to see Yamaguchi's extraordinary passion for sushi. He received two stars in the "Michelin Guide Toyama/Ishikawa (Kanazawa) 2016 Special Edition" and is a talented chef who also won the Bronze Award at the 3rd Cooking Masters.

Nonoichi City, Ishikawa Prefecture. About a 10-minute taxi ride from the station. Sushidokoro Mekumi is located in a residential area that makes you wonder if it's really in such a place. The restaurant was renovated a few years ago, and the counter is made of a single piece of straight-grained cypress. The walls are made of a mixture of diatomaceous earth and Noto soil, and there are no compromises even in the utensils and dishes. A simple yet dignified space is set up using only genuine materials. The boundless knowledge of fish that Yamaguchi Naoyuki talks about with ease is probably the reason why fans from all over the country visit the restaurant.
Food Taking advantage of the local area, "Noto-mae sushi" has evolved in a unique way
Always searching for the best ingredients, he drives 100km round trip to Nanao Port in Noto every morning. To bring out the natural flavor of the rice, he uses a blend of Sasanishiki and Sasashigure rice. In the old Edomae style, the sushi is basically cooked in hot water, but here he uses a unique cooking method that overcomes this drawback, and uses two different types of boiled soy sauce depending on the ingredients. He has meticulously researched theories of fish protein, rice starch, and more to create a stunning Noto-style sushi.

...Naoyuki, travels about two hours to Nanao Port in Noto to buy his supplies, and as soon as he returns to the restaurant, he starts preparing the sushi carefully. Taking advantage of the location, his uniquely evolved Noto-style nigiri sushi, rather than Edo-style, has an exceptional taste that is almost completely free of impurities. Yamaguchi continues to face sushi with a stoic attitude and sincerity. His journey doesn't seem to be over yet.
