ChefFujisawa Kenji - Using local ingredients and pursuing deliciousness
Born in Miyazaki Prefecture in 1971. He started helping out at restaurants from an early age and decided to become a chef. He trained at Chez Inno in Kyobashi, Tokyo, and also worked on Sushi at Kiyoda in Ginza. He then spent six years at Hotel de Mikuni in Yotsuya, learning a lot. When he returned to his hometown at the age of 29, he joined the previous owner in the kitchen of Lamptei. After serving as head chef at Stessa, under the supervision of Chef Takamasa Uetake at Canoviano in Meguro, he became the second generation owner of Lamptei in 2007.

While cherishing the flavors of his predecessor, Chef Fujisawa is dedicated to pursuing delicious cuisine that transcends genres. The specialty, Miyazaki Beef Tail Stew, is based on demi-glace sauce, but is flavored with a complex mix of red wine, port wine, cognac, and caramelized sugar dissolved in sherry vinegar. Meanwhile, the carpaccio made with local sardines is finished in a Japanese style, with soy sauce made with yuzu and light sesame oil.

Nishitachibana Street, commonly known as Nishi-Tachi, is Miyazaki City's largest shopping district and is packed with around 1,000 restaurants. Lamptei is located on the second floor of a multi-tenant building there. Although the building has been rebuilt once, the lamp that gave the restaurant its name and the stained glass inlaid into the door have been carried over from the previous store, creating a calm atmosphere despite being located in a busy shopping district. Paintings by local Miyazaki artists such as painter Ei-Q are hung on the walls, conveying the atmosphere of a good old Western Western Cuisine to the present day.
