私たちは食材の担い手と自然との共生、フードマイレージ食品ロスの削減を目指しながら活動しています。名物の鯛茶漬けを例にあげますと、お米は日々自然環境、米作り環境を深く考える生産者の方との直接の取引により提供が実現しています。真鯛で使用した頭やカマの部位もコース料理の一品に昇華し提供しています。また精米時に出る糠は、糠漬けや料理の下処理に使用するなどロスを減らしています。
お米は本来のコシヒカリを使用しています。コシヒカリ非BLは色、香り、甘味、一粒一粒の力強さ、どれも最高レベルと考えます。現在市販で販売されているほとんどは、おいしいと全国に広まっていった時代の品種とは科学的にも法律的にも違う品種のコシヒカリです。育てるのが難しいお米でありJAの取引のできない品種のため、日々自然環境、米作り環境を深く考える生産者の方から直接仕入れ、日本本来の食材を守る考えです。
