御椀:海老真薯、茄子、人参
強肴:鰹藁焼き 塩やスライスしてあるニンニクの薬味等、わらの香りとうまみを感じるため塩を勧められます。

19歳で料理人を志し、日本料理の世界へ足を踏み入れることを決意、京都で8年間研鑚を積んだ後、帰京、東京で和食や割烹で己の技術を磨き、2010年に「ぎんざ一二岐」、2014年に次のステージを目指すべく、自らの名を冠した「銀座よし澤」をオープ、そして2018年9月、六本木ヒルズに「よし澤」をオープンし、吉澤氏が長い修行で培った流麗な技術で、見た目も美しい美食の数々を提供しています。

正月らしい盛り付けで楽しめました。
名物のかつをのわら焼きが、ヨコワの藁焼きに代わっており、脂がのっており鰹より美味しかったです。
