2014年の阿佐ヶ谷以来の訪問です。
すいませんです(^-^;
やっとお邪魔出来ました。
さてさて本日の鮪は、八戸とのこと。
見るからに良い感じです。
ビールで軽く喉を潤し、一品料理から始まります。
まずはイクラ。イクラがトップバッターとは、初めてかも!
続いてタコです。勿論柔らかいです。
次がキンキの煮付け、絶品ですねぇ〜
牡丹海老:ミソと焼いた殻を合わせ細かく砕き、合わせミソとして頂きます(*´◒`*)
太刀魚の塩焼き、う〜ん、美味!!
北海道・夜市の鮟肝、ちょっと色が悪かったので、削いでいたら歩留りが悪くなり、一切れ4000円とか∑(゚Д゚)
鰯、海老のソボロが乗ってます!
太刀魚と平目のお出汁を頂いて、ここから握りにうつります。
ネタは17℃、シャリは38℃にするのがなんば流とか!
白烏賊、口当たりが素敵です。
江戸前の平目、4日目、身に力があります。
苫小牧の小柱、海苔は有明海苔、香りが堪りません。
細魚、透明感が美しい。
秋刀魚、切り込みの間の血合美を誉めておりましたが、表面も美しい。
鰹、香り控えめかな。
春子、難波さんに掛かるとどんな魚もシンデレラになってしまいます。
淡路島の鯖、安全の為、冷凍で48時間処理をしているとのこと。
山口・萩ののどぐろ、漬けにしてからしっかり焼いている。海苔も一枚づつ焼いているとのこと。
赤身、もっと食べたい。
中トロ、若いので薄めにカット!
小肌、本当に美しいです。
大トロ、王道です。
雲丹、心配していた雲丹も無事に登場!
穴子のオムライス風チラシ寿司でおもちらし!!
胡麻と海苔と胡瓜を加えもう一杯!!
最後に玉でおしまい!
握りは全体的に小ぶりで好みのサイズ。
どの握りも優しいく、魚愛を感じる握りでした。
次回は、お酒のペアリングで、是非お願いしたいです。
