神宮前にありながら、どこかホッとする2丁目商店街の一角にひっそりと居を構え、お蕎麦屋さん脇、石造りの立派な外階段を登ります。
白木一枚板のカウンターと、別室のテーブル席
カウンター内、板場の奥には立派な焼き場スペース。壁面をスレートで設えたレンガ造り。五徳の部分を露出させることなくスッキリデザインされ、ガスの他に、炭火焼き、釜、錫のチロリがピッタリと収まる燗つけ場まで設えた充実ぶり。
火の通しに、こだわる姿勢が窺えます。
通常は、カウンターでの撮影NGとのことですが、
本日はカウンター8人の貸切故、特別にOKをいただきました。
料理は、どれも出汁をしっかりと効かせた丁寧な仕事。江戸前のしっかりとした味付けと、優しい味のコントラストが見事!メリハリをつけた、私好みです。
特筆すべきは、火入れの絶妙さ。
後述の鰻一本、炭火丸焼きは、白眉の逸品!
お食事以降は2次会とも言える充実ぶり。
白飯、炊き込みご飯のほか、
必ず、手打ち蕎麦が用意されているのが、特徴。
さらに、デザート3種
食事時間3時間半から4時間
日本料理にして、フレンチ並みの充実した楽しい時間を過ごせる稀有なお店です。

冷はガラス猪口 燗はぐい呑みを選ばせていただします。
料理は
◯先付け 炙った唐墨の乗った、そら豆の温かいすり流しから
出汁がでしゃばらす、そら豆そのもの味 美味い!
◯向付は、甘鯛と山葵の茎、海苔の和えもの
ネットリとシャキッと食感のコントラストが絶妙です。煎り酒をつけていただきます。
◯海老と煮穴子の雛ずし
煮穴子は口中で蕩ける食感、味は江戸前かな?しっかりしていて私好み
◯椀 は、優しく味覚をニュートラルにしてくれます。味の濃淡、メリハリが効いて、いーい塩梅です。
◯お造りは2回に分けて
染め付けの器に アオリイカと鯛
織部には鰆の昆布締め
これを、煎り酒、醤油、もみじおろしでいただきます。
◯ホタルイカの石焼き
活のホタルイカ 熱々に焼かれた石板で、ジュアジュアっといただきます。
半生具合が、何とも言えません。
ついでに、残しておいた、アオリイカ、鰆も、焼いていただいちゃいました。
我々が自分の手で、ホタルイカの石焼に興じている辺りで、親方が、何やら、炭焼き場にて、串に刺された、丸く太く長いものを焼き始めました。
何と、鰻、開かず丸ごと焼きだそうです。
目を楽しませてくれます。
焼き上がるまで、かなり時間を要するようで、

◯鮎の春巻き
日本料理の春巻きは、こんな風になるんですねー。
めっちゃ美味しいです。
珍しい、細目の扇面の器がピッタリです。
この辺りで、ようやく鰻が焼き上がり、開いて中に、八丁味噌と白髪ネギを詰めていきます。
◯鰻の葱味噌焼き 木の芽を添えて
いやー、初めての食感です。
鰻の皮が、まるでパラフィン紙のような、薄く、パリッとした食感、中はしっとり、しかも厚みがあります。八丁味噌と白髪ネギも合いますねー!
かなり時間かけて焼いていましたが、火の通し、絶妙です。すばらしいの一語につきます。
◯しゃぶしゃぶ風煮物
と続き、お食事タイム
◯香の物 牛肉の時雨煮 しらすおろし酢
といった御飯の友 と 味噌汁が出され
土鍋釜で炊いた、御飯を待ちます。
◯筍ごはん 白飯
もう、かなりの量をいただいているはずですが、
両方ちょっとずついただきます。

親方自ら、サッと茹で上げ、氷に浸し
汁が、これまた、江戸前の辛いやつ!
チョコっとつけて、スルスルっといただきます。
最高です。
もう満腹なはずなのに、これも食べられちゃいました!

この葛切りもまた白眉の出来
濃厚な黒蜜を絡めて、トゥルリーん といただきます。
最中は、皮を炭火で炙って、合わせたてを

いやー、大満足
美味しかった。
