間接照明が照らす上質な空間で”阿波尾鶏“と“丹沢滋黒軍鶏“を堪能できる焼き鳥さんが町田にある。2023年11月にオープンしたばかりの新店『軍鶏 枩井』だ。大人の雰囲気が漂うカウンター席、上質な空間ながらも“軍鶏串会席”は7種類2300円から楽しめ、ずば抜けたコスパの良さは記念日やデートにもぴったり。また飲ん兵衛もあまり見かけない選び抜かれた日本酒やワインも兼ね揃えており、お酒を嗜みながら味わう軍鶏は言うもさらなり。

町田駅東口からほど近い都道47号。ビルの立ち並ぶこの通りに『軍鶏 枩井』は所在する。かっちりとした見た目の“きめたハウジング第23ビル”を階段で登ろうとすると風流な行灯が導いてくれた。
間接照明が醸し出す凛とした雰囲気は食の時間を楽しむのに十分。まずは先付け【軍鶏(しゃも)と大根の付け合わせ】からコースがスタートした。口にした瞬間にふわっと芳る柚子の上品な風味と出汁の染みた大根。柔らかくも弾力を感じる軍鶏に焼き鳥への期待値が自ずと上がる。
ワカメや紅心大根などが入ったサラダを経て、焼き鳥一品目『軍鶏』へ。”阿波尾鶏“と“丹沢滋黒軍鶏“の軍鶏を贅沢に食べ比べ。味と歯応えのバランスが良い“阿波尾鶏“は岩塩と脂が合わさり、えもいえぬ味わい。一方で”滋黒軍鶏“は活き活きとした弾力が特徴。旨みを噛み締められる肉質と焦げ目の香ばしさがハーモニーを生んだ。
今度は“軍鶏”と“もも”の違いを。丹沢滋黒軍鶏の『もも』はしっとりとした食感を持ちつつも岩塩が脂を盛り上げるような味わい。甘口の日本酒との相性も良かった。
『茶碗蒸し』は出汁の味が優しく、時折焼き鳥屋さんから料亭に連れて行かれたような気分になる。ひと段落置いて『椎茸 出汁醤油』。旨み成分が飲み物のようにぎっしり詰まった“かさ”とこりこりとした食感の“じく”が対になるようにそれぞれの良さを主張する...!
焼き鳥5品目は『せせり』。せせりは鶏の首周りのお肉でよく動かす部分なので噛むたびに感じる弾力が凄まじい。続く『レバー』はポーションが大きく、ぷちっと弾ける表面と、とろりとした食感が絶妙だった。
甘い刺身醤油で『あぶり〆サバ』を堪能した後、続けざまに『砂肝』。岩塩が引き立てるサクサクとした食感が爽快で印象に残りやすい。『ささみ』は生の食感を残しているので他の焼き鳥とは異なる滑らかな舌触りがえもいえぬ味わいだ。
特筆すべきは『ふくめ蕪』。旨みを多分に含んだ蕪は口にするとジュースのようにじゅわっと甘い汁が広がる。その柔らかさとは対照的にシャキシャキとした葉は蕪らしいクセがちょうど良い。
そして是非とも目を通していただきたいのが焼き鳥と一緒に楽しむお酒。日本酒は獺祭などの定番を敢えて外し、“ソガペール イリヤントンソン“や”天狗舞“など焼き鳥に合う日本酒が厳選されていてメニューをみるだけでワクワクする。また、お店イチオシのアルザスワイン『TRIMBATCH』は香りはさることながらも、鶏料理と合わさることを想定しているかのような果実実や酸味が焼き鳥をさらに盛り上げてくれた。
町田で焼き鳥を食べるなら、思い出したいお店です。
