TBS「情熱大陸」で紹介されてからすごい人気になっているらしい。潰れそうな父のお店を引き継いだ二代目(息子)は数年で全国でも有名な店へと育て上げた。修業は父の元でのみ。あとは食べ歩きと食材探しの旅。テレビに出て真駒内からすすきのに移転。ミシュランでも☆を取っている。二代目の若手店主(1981年生まれ)が今はすべて握っている。こだわりすぎて自らを「変態」と呼ぶ。う〜ん、どおりで私の口に合うはずだ(笑)。
つまみがかなり研究されている。トリガイ、きんきのしゃぶしゃぶ、などが特に印象に残った。
握りも細かい仕事がしてあり、タネが口の中でフワッとほどけてゆく(シャリではなくタネがほどける)。シャリは小さめでそれを包み込むようにタネが覆う。ワインが豊富。それもそのはず、ソムリエの資格を持っているのだ。(でも、私は日本酒を注文)
手渡しの雲丹鮑という贅沢握りは、通常は7-8月のスペシャリテらしいが今日はいいのが入ったらしい(ラッキー)。太刀魚のミニ丼もおいしかった。ホタテは、手で細かく解してから握る。そのままのも好きだが、これもまた素晴らしい。イワシも何枚かにカットしてから握る。この方が旨味が出るとのこと。好きな穴子ももちろん絶品。いや〜おいしかった。
