ChefMakoto Ueoka - Utilizing knowledge gained in Hong Kong and Guangzhou
Born in Kyoto in 1983. He trained at "XIV Arima Rikyu", "Hotel Nikko Osaka", "Kyoto Hotel Okura" and other hotels, and also worked at a Cantonese restaurant in Hong Kong. He often travels to various parts of Guangdong Province, such as Guangzhou, to absorb local cuisine. In 2019, he opened "Nishuro". His cooking philosophy is "rather than disassembling and reconstructing, the most important thing is how to improve the precision and perfection of traditional cuisine". He says that the huge shark fins and dried foods such as red bird's nest that are stocked in large quantities in the restaurant are "a hobby that goes beyond the realm of business".
Food A luxurious feel with a sophisticated and delicate finish
The restaurant is famous not only for the luxury of its dishes, but also for their delicate and profound finishing. The use of oil and seasonings is kept to a minimum, with the aim of bringing out the texture of the ingredients first. The "Steamed Local Chicken and Carrot Soup" shown in the photo, which may seem simple at first glance, uses specially selected, ultra-soft spring water to bring out the pure and clear flavor of the ingredients. The bliss is further enhanced when enjoyed with a glass of Shaoxing wine aged 20 to 30 years, specially selected by the owner.

The restaurant was renovated from a detached house in a residential area of Shichiku, Kita Ward, with the aim of allowing customers to enjoy a leisurely meal away from the hustle and bustle of downtown. The owner himself oversaw most of the design of the space, including the solid, textured counter overlooking the vibrant green courtyard garden. From the counter seats, the heat from the gigantic roasting oven, nicknamed "Rocket," and the steam rising from the large steamer can be seen up close, and the power and dynamism of the place ignites the hearts of gourmands.
