ChefKentaro Kato - A chef striving for the pinnacle of Chinese cuisine
Born in Okayama Prefecture in 1974, he began working part-time at a local Chinese Cuisine restaurant during high school and decided he wanted to become a chef. At the age of 21, he joined the famous Chinese restaurant Azabu Choko. He trained at both Azabu Choko Nishiazabu branch in Tokyo and Azabu Choko Takamatsu main branch in Kagawa, and was mentored by owner chef Matsuo Nagasaka. At the age of 28, he became head chef at the Takamatsu main branch. In 2010, at the age of 36, he moved to Okayama and opened Chinese restaurant Hasunomi.
Food Savor the flavors of the season throughout the course
selection course consists of over 10 dishes, starting with a seasonal health soup, followed by 5-6 small appetizers served at a good tempo, the classic stewed shark fin and abalone, seafood from the Seto Inland Sea, and a fragrant main Meat Dishes of meat. Taking advantage of Okayama's location, the course is packed with fresh ingredients from the mountains and the sea.

Kato has focused on the selection of drinks since the restaurant first opened. He has been very popular for offering pairings that at first glance may seem unexpected with Chinese Cuisine, such as natural wines and aged sake. If you come at the right time, you might have a chance to try rare wines from Okayama Prefecture, including "La Grande Colline."
Using the techniques he has developed at renowned Chinese restaurants, he transforms ingredients from the Setouchi and Okayama into delicious Chinese dishes.
Okayama Prefecture is known as a treasure trove of excellent ingredients, thanks to its warm climate and terrain surrounded by sea and mountains. Kato Kentaro of Chinese Restaurant Hasunomi turns the
...seasonal flavors into Chinese dishes that combine tradition and innovation. Kato gained 15 years of experience at the famous Chinese restaurant Azabu Choko, where he acquired the techniques and knowledge of various Chinese cuisines, including Sichuan. The chef's selection course is an extensive menu of over 10 dishes, and is also attractive because of the wide variety of pairings available, including wine and sake.
