Born in Shiga Prefecture in 1960, he trained at "Kawashige" in Kyoto and honed his skills. He returned to his hometown and became the head chef of Ryokan. At that time, he received advice from Takeo Koizumi, who was the director of the "Yogo Research Institute of the Japan Fermentation Organization Foundation" at the time, and opened "Tokuyamazushi" in 2004. He delights his guests with unique fermented dishes, including "nakazushi," a traditional dish from Omi.

Among them, the "Funa-zushi" made with Nigorobu carp caught in Lake Yogo is a masterpiece that can be said to be the result of Tokuyama's efforts.
