ChefSugiyama Daigo: A young craftsman who values the flavor of ingredients
Born in Shizuoka Prefecture in 1984, he is the second generation owner of Onseki and has been practicing the tea ceremony since high school. He spent six years training at Wako in Mejiro, where his predecessor also trained, and although the chef was strict with him, he loved him like a grandson. Since returning to his hometown of Yaizu, he has worked tirelessly to discover new flavors, working with local fishmongers and producers under the motto "things you can only eat here." He believes that the ingredients are the main focus of his cooking, and values the background of the ingredients and the history of the place of origin.

The fresh fish used in the dishes at Onseki is mainly sourced from Sasue Maeda Fish Shop, a long-established Yaizu restaurant renowned throughout the country, run by Maeda Naoki. Thanks to a long-standing relationship of trust, the restaurant prioritizes the delivery of ingredients that suit the restaurant, and together they work together to find the best cooking method to serve the fish in the most delicious condition. There is no doubt that this is a place of respect and mutual respect between top professionals. The dishes created in this way are dishes that can only be enjoyed at Onseki, and they lure countless gourmets into a dreamlike state.

Onseki hangs its noren curtain in an alleyway in a quiet residential area. The building, which was once an annex of a soba noodle shop, has a charming appearance. The signboard spells out the shop name "Sanshuya," giving it a sense of history. Passing through the alleyway and opening the door, you'll find a counter at the back, with a charcoal pit within reach. You can enjoy the process of the menu being served while watching Mr. Sugiyama's work. The tableware, which has been collected by two generations of the family, is also elegant. The private room, which can also be used as a tea room, is tasteful and comfortable, making use of the texture of the materials.
