いつの間にか1年半もの間ご無沙汰してしまった、大洗の名店「ちゅう心」さんに同僚と2人で伺いました。水戸駅から鹿島線で大洗駅まで。開店時間に合わせて17:30に訪問しました。間もなく棒茄子ですからね、ちょっと気合い入ってます(笑)。
お店に入ると、いつものカウンター席に着席。広いカウンターで、カウンター向こうの大将(社長)や料理人さんの調理の様子が良く見える特等席です。
今日頂いたのは、以下の通りです。
【 サッポロ生ビール 】 @550×2
まずはとりあえずビールで乾杯!飲むことに夢中で、写真を撮り忘れました(笑)
キンキンに冷えたサッポロの生、最高に美味いです!
【 刺身盛り合わせ 】@1650×2
最初に頂く定番、「刺身盛り合わせ」。大将が魚を最初に魚の説明をしてくれましたが、うまく聞き取れなかったので、違っているかもしれませんが、「金目鯛、甘海老、本つぶ貝、鯵、鰹、あいなめ、蛸」だったと思います。どれも鮮度抜群でとても美味しいのですが、鰹の刺身は特に脂がのっていて、見事なトロカツオ!今年一番の美味しさでした!
【 岩がき(大洗産) 】@1200×2
これが食べたくて「ちゅう心」さんに来たと言っても過言ではない、大洗産の「岩がき」。普通岩がきは、海岸のテトラポットの間などから獲るらしいのですが、ちゅう心さんは今では数人しかいない、素潜りの漁師さん達が海に潜って獲った貴重な岩がきだそうです。
この希少な岩がきは、とにかく身が大きいのが特徴。箸で持ち上げようとしても重くてなかなか持ち上がりません(笑)。なんとか箸で掴んで食べてみると、とにかく驚くほどたぷたぷ&ぷりぷりで、牡蛎のミルクがたっぷり!か~、めちゃめちゃ美味い!贅沢の極み!ちゅう心さんに来た甲斐がありました!
【 あわび刺(長崎) 】@1650×1
同僚が頼んだあわびの刺身。贅沢の極みが続きます。目視では12~13㎝サイズのアワビを目の前で捌いて出して頂けます。適度なこりこり感があるあわびですが、硬くはなく、美味しい海の珍味です。お酒のアテにぴったり。
【 焼きはまぐり(鹿島産) 】@ 420×4個
はまぐりと言えば、鹿島灘。2個ずつ頼みました。これがめっちゃ大きなはまぐり!生の状態でハマグリの口をこじ開け、1枚貝にして網で焼きます。これなら焼けた時にはまぐりの汁が溢れなくてすみます。焼けた後は2つにカットしてくれ、頂きました。今が旬のはまぐり。ぷりぷり食感とジューシーなはまぐりの味わいが、何とも贅沢な美味しさでした。

私が頼みました。相変わらず爽やかな味と香りの、大好きな白州ハイボールです。

同僚が冷やで飲んでいました。今思えばちょっと貰えば良かった(笑)。
【 魚介グラタン 】@1500×2
お気に入りのメニュー。帆立や海老、イカなどの魚介類がたっぷり入った、めっちゃ旨み濃厚なグラタン。何度食べても美味いですね~♪

味がよ〜く染みたつぶ貝のお通し。奥のワタが苦くてまた美味いです。

本日の〆の一個目は、のどぐろ(アカムツ)握り。コリッとした歯応えと脂がのった濃い旨み。一貫しか食べませんが、その美味しさは感動的でもありました。
【 紫雲丹(北海道)握り 】@900×2
〆の二個目は、紫雲丹の握り。多分軍艦巻きかと思っていたら、雲丹てんこ盛りの握りでした。ぱくりとひと口で頂きましたが、すんばらしい雲丹の芳醇な香り!いやいやいや、まるで獲りたてのような超新鮮で爽やかな美味しさの雲丹です!のどぐろにも引けを取らない感動的な味わいでした。
【 シジミ汁(涸沼川) 】@500×2
握りと一緒に頂いたのがシジミ汁。ちゅう心さんでは、涸沼産ではなく、涸沼川産しか使わないというこだわりのシジミ汁。シジミ汁は、注文すると必要分だけを鍋で作ってくれます。時期や大きさによって茹で時間や味付けが異なるらしく、茹で時間が長いと、汁にシジミの出汁が出るけど身が硬くなるとの事。逆に茹で時間が短いと、出汁は少なめながら、身はふっくらとして味の濃いシジミが食べられるとの事。なるほど!
今回はシジミが大きいので、茹で時間は短め。その分味噌と鰹ダシを少々加えて味のバランスを取るのだとか。実際食べてみると、ふわふわでとても美味しいシジミが味わえます。いやぁ、ちゅう心さんのシジミ汁、こちらも最高峰の美味しさ!
と言う事で、今回は贅沢三昧に食べたいものを食べました♪それにしても「ちゅう心」さんの魚介類の質の高さと、調理の腕前の高さといったら、改めてホントに素晴らしいと思いました!
魚好きの自分としては、茨城県内トップクラスのお店だと思っています。
ん〜、今度はランチにも来てみたいですね。
